Aunt Joy's Meatballs
Best meatball recipe ever. You must use fresh parsley and fresh parmesan cheese.
Ingredients
- 1 large onion, chopped fine (important)
- 1 lb. Lean Ground Beef
- 1 lb. Ground Pork
- 1 c. plain breadcrumbs
- 1 c. parmesan cheese, finely grated
- 2 eggs
- 1 bunch FRESH parsley, chopped
- 2 tsp. salt, approximately
- 2 tsp. black pepper
Instructions
Thoroughly miix all ingredients in a large bowl. Form into balls and fry in a pan till cooked.
NOTE: you can put them on cookie sheets and bake in the oven if you are short on time. Bake at 375 for approximately 20 minutes. I turn them over after 10 minutes of cooking to make a crusty outside. However, my family swears they taste better fried. We did a taste test!
NOTE #2: Plop the cooked meatballs in a huge pot of your red sauce and let them cook in the sauce for an hour or more. I also pour in a little of the meatball grease into the sauce. Gives it a nice flavor.
Servings: 6 servings but that depends on how hungry you are!
