Easy Veggie Tomato Stir Fry
Healthy Quick Meal
Ingredients
- 1 yellow squash
- 1 package sliced mushroom
- 1 yellow onion
- 2 teaspoons Italian spices
- 1 teaspoon kosher salt
- 1/2 package fettuccine noodles
- 1 tablespoon olive oil
- 2 tablespoons fresh grated parmesan cheese
- 2 cans petite diced tomatoes in sauce
Instructions
Slice squash into one inch quarters. Chop onion. Brown onions, mushrooms and squash in a frying pan with olive oil. Add the salt. Add the diced tomatoes and sauce to the vegetables and cook for 10-15 minutes. Add Italian spices to the mixture. Add Parmesan cheese right before serving. Pour over cooked fettuccine (or favorite pasta).
